I love Toby Amidor's Healthy Living High-Protein Cookbook. If you are like me and want to get enough protein without eating dry chicken breasts, this book is exactly what you need. Now that I am retired, I finally have the time to focus on my health goals. I personally love using lentils, beans, and peanut butter as my main protein replacements, and this book gives you so many great ways to use them.The best part is how incredibly easy the lentil and bean recipes are to prepare, and they store beautifully in the fridge for easy leftovers. 

The book uses normal, budget-friendly ingredients you can buy at any regular grocery store. It features everything from a great lentil shakshuka to fast sheet-pan dinners and high-protein treats like blueberry muffins.

It is written by a registered dietitian, so she breaks down the science of why our bodies need protein to protect our muscles as we age. She even includes all the nutrition facts for every single meal, which makes tracking your food incredibly simple. She wraps the whole book up with four weeks of ready-to-go meal plans that take all the annoying guesswork out of cooking and shopping. This cookbook is worth adding to your collection.
